Full Pukus

Today is Waitangi Day; the anniversary of the signing of Aotearoa New Zealand’s founding document, the Treaty of Waitangi, and a national holiday.

We decided we wanted to do something to mark the journey our country has undergone since its signing in 1840 and nothing is more central to most kiwi celebrations than Parāoa Parai: fry bread.

Although we’ve eaten possibly way more than our fair share of it over the years we’d never actually made it. Today we rectified that.

  1. One can’t really say Happy about Waitangi Day…I don’t know your history super well, but I do know that reconciliation has been complex and a long journey. Here in BC, and all of Canada, also have a regrettable and complex history in which colonization subjugated indigenous peoples in cruel and unfair ways. On another note…fry bread! This is something dear to the First Nations people here on the coast also. My understanding is that they adopted it from Scottish settlers, which is supported by the fact that many call it bannock. And yes, it’s a wonderful treat!

  2. I checked out the recipe and can see it would be something reserved for special occasions with the time taken for the bread to rise, never mind stuffing the dough with chocolate before deep frying – but sooooo worth it!
