Today is Waitangi Day; the anniversary of the signing of Aotearoa New Zealand’s founding document, the Treaty of Waitangi, and a national holiday.
We decided we wanted to do something to mark the journey our country has undergone since its signing in 1840 and nothing is more central to most kiwi celebrations than Parāoa Parai: fry bread.
Although we’ve eaten possibly way more than our fair share of it over the years we’d never actually made it. Today we rectified that.
